This Comenda Grande appears to be rather particular about maintaining a perfect fermentation temperature (25-28°C – a touch dramatic, wouldn’t you agree?). The result is a wine with a definite penchant for refinement, dominated by notes of blackberry and plum, seemingly untouched by the oak influence. Despite the ambition, the elegance is undeniably present, perhaps a little overshadowed by the complexity of the Trincadeira and Alicante Bouschet grapes. It promises conversation, and frankly, a perfectly roasted suckling pig would be an excellent pairing.
