This Conde D’Ervideira Reserva clearly enjoyed a little time out before hitting the bottle. A prolonged maturation at a cool 12°C in vats – a sort of indulgent spa treatment for the Antão Vaz grapes – prepares it perfectly for a fermentation between 13°C and 15°C. The Alentejo producer’s commitment to precise temperature control is evident, and the result is a refined white wine. It’s particularly lovely with grilled fish and a squeeze of lemon, or perhaps a seafood paella.
