“Contos da Terra” presents a truly intriguing project – it seems to have challenged the very foundations of winemaking. The producer’s unusual approach, guided by harvest date rather than grape varietals, hints at a rather… scientific methodology, much to the apparent astonishment of some winemakers. This meticulous process, including malolactic fermentation in stainless steel, raises questions about the essence of it all. Yet, the result is a Porto that, despite its rigid execution, pairs wonderfully with a classic bacalhau à Brás – a delightful juxtaposition, to be sure.
