This Convés rosé certainly seems to have sprung to life with the first light – they say the grapes were picked at “grape-pickers’ bedtime!” The chilled maceration technique clearly elevates the wine, and the cold settling process adds a touch of intrigue. Respectful fermentation of Touriga Nacional and Aragonez yields a vibrant rosé bursting with fresh fruit, perfectly suited to grilled fish or a simple tomato and mozzarella salad.
