COS Vittoria Delle Fontane is a natural and biodynamic red wine made with the native varieties Nero d'Avola and Frappato, a blend that dominates most of this winery’s productions. In a curious twist, the wine ferments in cement in direct contact with the skins before moving to Slovenian oak barrels, where it finishes maturing for a couple of years. It then completes its ageing in amphorae before bottling, reaching its full potential. One of the island of Sicily’s most representative wines, it offers a warm, robust mouthfeel with tannins that are present but friendly—ideal to accompany a full-course meal or as a contemplative glass.
