This Cossart Gordon 10 Years Old Boal is surprisingly generous, boasting notes of barley sweetness and honey – practically begging for a slice of fruitcake. The Wine Spectator rightly flagged its persistence, and for good reason; the palate is saturated with dark molasses and hints of decadent fudge, all underscored by a touch of classic confectionary. Thankfully, a good level of acidity keeps things from becoming cloying, and it’s a superb match for a lemon soufflé, naturally.
