This Jura Pinot Noir from Tissot et Barberon clearly had a rather relaxed upbringing. It underwent a prolonged maceration in truncated vats – almost two weeks of pure indulgence – before ageing in both new and older oak barrels. The producer wisely prioritizes minimal sulphur use, trusting in the wine’s natural character. A fantastic pairing would be with earthy mushroom dishes or duck, truly allowing those complex notes to shine.
