This “Couteiro-Mor” – a rather dramatic name, isn’t it? – is a bold venture of Aragonez, Touriga Nacional, and a touch of Syrah, genuinely raising the bar for the Alentejo. The careful hand-harvesting ensures only the finest fruit makes the cut, and the cold, pre-fermentation maceration really unlocks the character of these beautiful grapes. A year in French oak has polished it with a wonderfully smooth texture and complex aromas. Seriously, it’s fantastic with game or earthy mushroom dishes – a truly memorable pairing.
