Covela The first biodynamic wine produced at Quinta de Covela, it could not have had any other grape than Avesso. It shows the more complex side of the variety with excellent tension and structure – very gastronomic. Manual harvest. Grapes are transported in small boxes to avoid crushing. Bunches are manually selected. Total destemming followed by gentle pressing. Spontaneous fermentation in 300‑litre used oak barrels sourced from Austrian and French forests. Racking on the whole lees, with periodic bâtonnage. Allergen information Contains sulfites.
