CV Curriculum Vitae CV – Curriculum Vitae Douro Tinto comes from a single vineyard located in the valley of the Rio Torto. It is made from more than 25 different grape varieties from a single 80‑year‑old vineyard, including Rufete, Tinta Amarela, Donzelinho Tinto, Tinta Francisca, Sousão, Touriga Franca, Tinta Roriz and Touriga Nacional, among others. All grapes are hand‑picked and selected before being destemmed and placed in granite vats. All grapes are stomped 2–3 days before fermentation begins. The wine ferments in vats, and occasional stomping is used to extract tannins, colour and flavour in a homogeneous way. The wines are transferred to French oak barrels 75 % new (225 litres) for malolactic fermentation and 21‑month ageing. The final batch is completed about a month before bottling.
