This Dez Tostoes, a beautiful Antão Vaz from the Alentejo, clearly has a deep respect for tradition. The hand-harvested grapes, using 20kg boxes, speak to a truly meticulous process – almost a hymn to patience, wouldn’t you say? The cool fermentation at 12°C in stainless steel ensures the complex character of the Antão Vaz isn’t disturbed. The time in French and American oak adds lovely layers, but it’s undoubtedly the influence of the Alentejo terroir – renowned for its freshness and acidity – that truly elevates this wine. Excellent with grilled white fish or a seafood paella, really.
