Natural and spontaneous alcoholic and malolactic fermentations; “Cuivason” for over 20 days; 18 months aging in new oak barrels, 50 % French and 50 % American. Bottled without stabilisers or filtration. 8 months bottle ageing. Pairing suggestions: pairs well with game meats, red meats and cheeses. Store in a cool, dry place, protected from light and temperature fluctuations. Serve at 16–18 °C. Consume in moderation.
