This Diga from the Bairrada, crafted with Viognier, initially presents a touch shy on the nose – a little hesitant to fully reveal the potential of the grape, with a hint reminiscent of Côtes du Rhône, which, I must admit, was rather appealing. However, on the palate, it delivers a surprising amount of volume and acidity, making it ideally suited for spicy dishes. The winemaker clearly believes in this wine's potential, suggesting a little time to ‘open up’ and truly showcase its character. It would pair wonderfully with poultry or fish, perhaps with a judicious kick of spice.
