Dom Diogo Vinification This wine results from a meticulous selection of the finest Vinhão grapes, blending tradition with modern winemaking techniques. The harvest is carried out manually, exclusively in the morning, with grapes packed in small boxes. Fermentation follows the traditional method, with foot‑pumping in granite vats and controlled temperature. As it is not filtered, it may present natural sediment in the bottle. Pairing It is ideal for accompanying traditional Portuguese cuisine, pairing perfectly with rojões, sarrabulho porridge, cabidela rice, lamprey, grilled sardines, and cod dishes. It is also an excellent choice to serve with smoked eel and suckling pig or roasted pork.
