This Donelan Cuvée Keltie appears to be the product of a rather intense, almost scientific, pursuit. The producer’s team meticulously identified subtle variations in the terroir, isolating tiny sections of the vineyard – lines, slopes, you name it – and harvesting just enough to ensure a flawless maturation. Jeb Dunnock himself has hailed it as a true gem, praising the complexity of the aromas and flavours, and it’s a fantastic accompaniment to richer red meats with warming spices.
