Edouard Delaunay Denomination of Origin: AOP Chablis Grand Cru Preuses Terroir The “Les Preuses” climate sits on a gentle south‑southwest‑facing slope with a view of the Grand Cru ridge. The soils comprise a mix of brown clay‑limestone and Kimmeridgian limestone marl, giving the wine an exceptionally pure and mineral character. Vinification The grapes are hand‑picked. The musts are clarified with precision and fermented in oak barrels of 228 and 500 litres. The fermentation is closely monitored and executed with accuracy. The wine rests on its fine lees for XX months, during which a single punch‑down is performed. It is then decanted twice and carefully blended to achieve the perfect balance.
