**Edouard Delaunay AOP Petit Chablis** **Terroir** Carefully selected grapes grown on cool plots on the Chablis plateau. The brown Portlandian limestone—unlike the Kimmeridgian limestone that characterises the Chablis AOC—does not contain fossilised oysters. The plateau’s altitude and cool nights preserve the grapes’ acidity, yielding lively, expressive wines. **Vinification and Maturation** The grapes were harvested at the peak of ripeness. The juice was clarified precisely before fermenting mainly in stainless‑steel tanks, with careful temperature and kinetic monitoring (below 18 °C). The wine is then aged on fine lees for 15 months, stirring the lees once a week during the first two months to add further complexity. Regular tastings ensure optimal development of organoleptic qualities before the final blend. **Pairings** Perfect with shellfish and seafood, white fish, and grilled white meats (preferably without sauce or with a slight cream touch). It also pairs wonderfully with vegetable terrines or salmon terrines. Best enjoyed chilled, between 8 °C and 10 °C, to preserve its bright vivacity and let its aromatic expression shine.
