Edouard Delaunay Appellation: AOP Chablis Premier Cru Fourchaume Terroir Our Fourchaume is produced from grapes grown on the coolest plots of this terroir, with a west/southwest exposure. The soil consists of deep Kimmeridgian clay-limestone marls, with brown clays and a low proportion of pebbles, giving the land excellent water reserves and good drainage. Premier Cru Fourchaume is the emblematic Premier Cru of Chablis, with a large planted area (140 ha), producing generous, mineral, seductive and complex wines. Winemaking and Ageing The grapes are harvested at the peak of ripeness. The must, carefully clarified, is transferred to stainless steel tanks and 20% barrels for a highly precise fermentation. The wine remains in contact with fine lees for 12 months, with frequent tastings to determine operations such as batonnage or racking.
