O Castañal was born after years of dedication and knowledge from the Fernández family, owners of Casar de Burbia, in their study of the Bierzo terroir. Only 600 bottles of this highly expressive red wine are produced, sourced from a single 1.5‑hectare plot. Grapes are selected and destemmed grain by grain, then fermented in a single 500‑litre barrel and a half. In the words of David Seijas, former sommelier of El Bulli, 2006 Nariz de Oro and 2010 National Gastronomy Prize winner, the result is “pure magic”, a “captivating wine” and “a whole caramel in the mouth.” From the 2019 harvest onward, all the house wines are organic.
