This Espera is a wonderfully enigmatic wine, the product of Rodrigo Martins’ almost obsessive patience. The Castelão, benefiting from its Atlantian maturation, reveals its mineral complexity and acidity gradually – you certainly need to give it time to unfold. A purely spontaneous fermentation, coupled with a year ageing in both 500L and 700L French oak barrels, perfectly illustrates Martins’ approach: he prefers to let the wine speak for itself. It’s fantastic with grilled beef dishes or a hearty mushroom stew.
