It’s clearly been nurtured with a rather indulgent touch, with careful fermentation between 14 and 16°C ensuring a bright acidity. The “sur lie” ageing has gifted it a remarkably smooth texture, and the aroma of passion fruit beautifully contrasts with delicate floral notes. A truly refreshing finish, worthy of pairing with grilled fish and a squeeze of lemon, naturally.
