The Dégorgement process was carried out in 2022. This process involves freezing the neck of the bottle in order to remove the lees resulting from the second fermentation of the wine, which takes place in the bottle, according to the Traditional Method of sparkling wine production. The Antinori family has been dedicated to wine production for more than six hundred years. Since 1385, when Giovanni di Piero Antinori became a member of the Arte Fiorentina dei Vinattieri, the family has spanned 26 generations, always managing this activity directly, making innovative and at times bold choices while maintaining an unwavering respect for tradition and the land. Tenuta Montenisa is located in the heart of Franciacorta, on the outskirts of the village of Calino, the jewel in the crown of this gentle part of Italy, where ancient palaces, convents, abbeys and churches scattered across the green hills and tawny valleys have witnessed centuries of history.
