This sparkling wine from Vinha Formal certainly pulled a surprise – a vibrant burst of Bical and Touriga Nacional that reminds us sophistication doesn’t *have* to be bottled in gold and fizz. It boasts a wonderfully persistent attack, as if the Bical itself was shouting “don’t be shy!”. Seriously refreshing and best enjoyed with a classic Bacalhau à Brás to cut through the richness.
