Família Hehn White Sparkling Reserve – DOC Távora‑Varosa Harvest: Second week of September **Terroir** The vines grow between 640 and 720 m above sea level on a gently sloping southeast-facing hillside. The soils are derived from metamorphic slate formations with quartz outcrops, having a friable‑sandy texture with some gravel. **Vinification** The grapes were hand‑picked in 20‑kg crates, gently crushed without destemming in a pneumatic press. The must was pumped into temperature‑controlled stainless‑steel fermentation tanks (17–20 °C), where the base wine fermented. Afterward it was bottled and moved to a cool cellar for the second (secondary) fermentation by the classic méthode champenoise.
