This Filipa Pato, from Luis Pato, is a white wine that takes a delightfully rebellious approach to the classic Bairrada style. The Bical grapes, harvested with the astute timing that Luis Pato demands, are blended with Arinto – a grape, as you’d expect, favoured by the estate – which spends a particularly serene time on the vine. The fermentation, conducted using the spent lees, avoids the usual batonnage, resulting in a wonderfully vibrant acidity. And the stability achieved naturally throughout the winter months promises a truly elegant and refreshing result; perfect with grilled fish or shellfish, of course.
