Filipa Pato Authentic wines, no makeup. Vinification: Bical (80 %), Arinto (20 %). The grapes are hand‑picked from different vineyards. Whole bunch pressing and fermentation with indigenous yeasts in temperature‑controlled tanks. About 10 % of the batch ferments in French oak barrels (500–600 L). Bical is harvested at the start of September and Arinto 2–3 weeks later, with separate vinifications. The wine ages on fine lees, without bâtonnage, naturally stabilising during winter. The final batch is produced in early spring after stabilisation. Stage: - 10 % in French oak barrels (500–600 L). - Bottle ageing for 2 months before release. Pairing: Ideal with fresh goat and sheep cheeses (quark), raw or marinated fish, shellfish, grilled poultry, smoked quail, Mediterranean cuisine, and salads with fresh yuzu or lemon vinaigrette.
