Produced exclusively from the Bical grape, sourced from certified organic and biodynamic viticulture, the Nossa Calcário Branco accurately expresses the identity of the limestone soils from which it originates. It presents a bright, intense straw‑yellow colour with greenish reflections. Aromatically, it stands out for its strong minerality and a subtle smoky note typical of limestone, wrapped in nuances of ripe pear, characteristic of Bical, and delicate hints of dried fruit. As it develops in the glass, suggestions of thyme and honey emerge. On the palate it is elegant and creamy, with an enveloping texture and pronounced minerality translated into a subtle Atlantic salinity. Wide and structured, it finishes long and precise, with notes of ripe fruit and a slightly candied nuance. A wine of great gastronomic versatility, ideal for pairing with noble fish, stewed veal, game birds or aged cheeses. With excellent ageing potential, it can mature harmoniously for about 10 years. Filipa Pato confirms the old saying “a son of a fish knows how to swim.” Although she followed in her father Luís Pato’s footsteps, including in her academic training, Filipa has always wanted her own world, her own project, where she would showcase her ideas and ascend on her own terms. The 2001 harvest, a great year in Bairrada, would provide all this.
