Made exclusively from the Bical grape, sourced from certified organic and biodynamic viticulture, Nossa Calcário Branco precisely expresses the identity of the calcareous soils from which it springs. It displays an intense, bright straw‑yellow color with greenish reflections. Aromatically, it stands out for its strong minerality and a faint smoky note typical of limestone, wrapped in nuances of ripe pear, a hallmark of Bical, and delicate hints of dried fruit. As it evolves in the glass, suggestions of thyme and honey appear. On the palate it reveals elegance and creaminess, with an enveloping texture and pronounced minerality, translated into a subtle Atlantic‑inspired salinity. Full‑bodied and structured, it finishes long and precise, with notes of mature fruit and a slightly candied nuance. A wine with great gastronomic versatility, ideal for pairing with fine fish, braised veal, game birds, or aged cheeses. With excellent aging potential, it can mature harmoniously for about ten years. Filipa Pato is a confirmation of the old saying “a fish’s son learns to swim.” Though she followed in her father Luís Pato’s footsteps, even in her academic training, Filipa has always wanted her own world, her own project, where she could showcase her ideas and rise on her own terms. The 2001 harvest, a great year in Bairrada, would provide all this.
