This Flor do Tua, straight from the slopes of Trás-os-Montes, clearly had a brilliant idea. The pre-fermentation maceration with Viosinho and Códega – a full 12 hours, no less – really encouraged some thoughtful aromatic development. It’s been meticulously clarified, a gentle 48 hours ensuring a pristine freshness that even a fairy would be impressed with. Absolutely delightful paired with grilled fish or a simple tomato and basil salad; a combination this wine, with its delicate character, will undoubtedly adore.
