Framingham O Sauvignon Blanc from Marlborough is famous for its distinctive bite. But our interpretation of this timeless classic has hidden depths. There is a complex soul beneath that wild bravado. Ripe fruits from the Wairau Valley, a touch of film fermentation and a quick stint in oak and acacia barrels added layers of flavor and texture. This is a wine that does not reveal everything on the first sip. Each parcel of fruit is kept separate in the cellar. The musts were predominantly fermented in stainless‑steel tanks using various treatments, however 8 % of the final wine was fermented in oak and acacia barrels. A small portion was fermented on the lees. Fifty percent of the blend was aged on lees for five months before being blended and bottled. Framingham’s Marlborough Sauvignon Blanc was conceived to be typically “Marlboroughian” in style, with a few twists. Texture and mouthfeel are as important to us as the aromatic and flavour profile. Consequently, our Sauvignon Blanc is a very gastronomic wine. Enjoy it with sushi, mussels, oysters… It pairs with all kinds of seafood, especially shellfish, salads and light summer dishes.
