“This Frei João Clássico, hailing from the Bairrada, certainly seems to have given the matter some thought before delightfully surprising us. The Baga grapes, nurtured in their traditional *talha* vessels, have clearly benefited from a careful approach, refining their flavour profile. Following a vinification process that leans towards the meticulous – complete maceration and a gentle pressing – the wine spent 18 months ageing in French oak barrels, creating a beautiful balance between the Baga’s inherent robustness and the wood’s elegant influence. Three years in bottle, essentially a patience-building exercise, and the result is a wine with such a refined colour it feels almost painted, offering notes of resin, star anise, and dried fig, leaving a lingering finish that makes you wonder if it’s actually dreaming. Perfect enjoyed slowly alongside a good Iberian ham, naturally.”
