This Galitos Alentejo feels like it sprang to life on a particularly lively August night, with the harvest taking place under a starry sky. The hand-picked grapes ensure maximum freshness, leading to a swift and precise separation. The young wine is then held at a remarkably cool 10°C, letting the purity of the grapes shine through, followed by a carefully controlled fermentation at 18°C to achieve a lovely balance. A four-month maturation in stainless steel allows for a welcome layer of complexity – perfect with grilled fish or a classic Bacalhau à Brás.
