Les Hautes Chèvres is one of those gems that capture the purest essence of the Marne Valley. Vincent Laval, a key figure in biodynamic viticulture in Champagne, signs this cult “white of noirs” sourced from the family’s oldest vineyards, planted between 1965 and 1967 on the hill of Cumières. Faithful to a philosophy of minimal intervention and maximum respect for the clay‑limestone terroir, this sparkling wine ferments and matures for eight months in oak barrels before entering a long 48‑month bottle ageing. The result is a brut nature with a breathtaking personality.
