Harvested at the very beginning of September – before we’d even had a chance to regret the spring’s relentless drought – the wine possesses a remarkable resilience. Predominantly Vermentino, it’s been subtly bolstered by 5% of other grapes, a clever move to tame the terroir’s intensity. With a brisk acidity of 5.81 g/L and a dry extract of 19.5 g/L, it’s a wine bursting with life, defying the challenging climate. Seriously refreshing, and utterly delightful with grilled fish or a seafood salad.
