“This Grande Rocim, harvested meticulously in September, is a decidedly traditional wine. The grapes, chosen one by one with remarkable care, undergo a 14-day foot-treading fermentation in a traditional lagar, lending a wonderfully tactile character. A prolonged maturation in French oak barrels – including a double aging in new oak – adds welcome complexity, though perhaps a touch too boldly for some palates. It pairs beautifully with grilled beef.”
