Vinification: After the removal and crushing of the peduncles, the grapes were taken to pneumatic presses to separate the must from the skins. Properly protected from oxidation by the use of inert gases, the must was subjected to low‑temperature aging for 24 hours to achieve the required level of clarity. The different varieties used in this wine were vinified separately in stainless‑steel tanks at a controlled temperature of about 16 °C for roughly 15 days. It was bottled immediately after a short maturation period of about 4 months in stainless‑steel tanks.
