Vinification: The grapes were destemmed and then gently crushed, with the solids carried by gravity into stainless‑steel fermentation tanks equipped with automatic temperature control and pumping. Fermentation lasted about five days, during which the wine was racked repeatedly to gently release aromas and phenolic compounds from the skins. After this, the must was transferred to aging tanks and the solids were carefully pressed in pneumatic presses to extract the wine from them. Following malolactic fermentation, the wine is aged in stainless‑steel tanks until bottling, which is carried out in stages to maintain the blend’s freshness. It is then aged in the bottle for variable periods before sale.
