“This Arinto from the Azores, born from century-old vines in the Criação Velha, clearly spent a rather contemplative youth. It underwent prolonged cold maceration with the skins, undoubtedly drawing on the memory of the volcanic soil. Fermented with indigenous yeasts in a French oak barrel, and then aged for considerable time within the Gruta das Torres – a 1,500-year-old lava cone! – it boasts a remarkably mineral character. A sophisticated wine, ideally paired with freshly grilled fish or seafood, allowing its delicate nuances to truly shine.”
