Description

**Herdade das Servas Viticulture** Vineyards planted on red soils derived from brown or crystalline calcareous rocks, with slate patches, benefiting from a Mediterranean climate with high thermal amplitude and hot, dry summers. After the necessary green interventions during the vegetative cycle, the grapes were hand‑harvested and transported to the cellar in small boxes. **Vinification** The grapes are selected on the sorting table, destemmed, and then undergo a pre‑fermentation maceration. Fermentation takes place in a clay vat and stainless‑steel tank with temperature control. **Maturation** After malolactic fermentation, the wine aged 12 months in 1st and 2nd‑year French and American oak barrels. Following bottling, it rested in bottles for 10 months in our cellar. To preserve all its qualities, the wine was not stabilized, allowing natural sediment formation. **Longevity** 20 to 30 years, if stored in a cool, dark place with the bottle lying down. **Pairing** A wine for special moments. It pairs beautifully with red meats, game, strong cheeses, and cured meats.
