This rosé from Casa Relvas, selected by Herdade São Miguel, clearly enjoyed a rather indulgent slumber before awakening. The hand-picked grapes ensure only the finest berries are chosen, and the early morning maceration – precisely between 8am and noon – lends a surprisingly complex, almost audacious character. Predominantly made with Aragonez and Touriga Nacional, it’s fermented in stainless steel with minimal lees contact, resulting in an elegance that avoids any rush. Ideal with grilled fish and a simple tomato salad, really.
