“Horácio Simões is a truly intriguing Moscatel – it’s as if it spent a long, slightly eccentric chat with a good cognac. The interrupted fermentation was deliberately employed to achieve a remarkable level of complexity, and the extended maceration, with a distinctly French influence, certainly delivers a singular result. Following bottling, it rested in oak, likely aiming for a touch of sophistication – or perhaps simply a richer hue. It pairs beautifully with aged cheeses and nuts, a timeless combination.”
