This Castelão from Horácio Simões is a genuine throwback to tradition – a delightful return to the ‘moeira’ method, where fermentation happens with the stems and skins in granite lagares, just as our grandparents used to do. Remarkably intense, it’s got a beautiful dance of fruit notes beautifully supported by nine months in French oak. The palate is wonderfully round, concentrated and smooth, with a lingering finish that suggests it’ll happily mature for a few more years if treated with care. Ideal alongside a hearty grilled beef dish.
