Following a rigorous selection process, fermentation, aided by careful racking and draining, truly captures the complexity of the Vinhas Velhas vines and the surrounding terroir. The result is a structured wine with remarkable freshness, a characteristic that belies its extended ageing in oak barrels – a fantastic accompaniment to a perfectly grilled steak, I’d suggest.
