The classic ‘curtimenta’ – with partial destemming – and careful stainless steel fermentation add layers of complexity to the initial cherry notes, with a subtle hint of pine and perhaps a whisper of smoke. The 18 months spent ageing in French oak barrels at the Adega Regional de Colares impart undeniable elegance. It’s a fresh, intense wine with a remarkable persistence, seemingly defying its very name. Wonderful with a good slice of Iberian ham, naturally.
