Infinitude Located between the Sintra Mountains and the Atlantic Ocean, 25 km from Lisbon, the Colares region is one of Portugal’s oldest wine demarcations (established in 1908). It is the westernmost point on the European continent and the smallest region that produces still wines in the country. **Vines and Terroir** The vines are planted on trellises in the characteristic sandy soils, free of phylloxera, less than 1 km from the Atlantic coast and at an average altitude of 110 m. The climate is strongly influenced by the Atlantic, with moderately warm summers, salty winds, and constant breezes. The Sintra Mountains to the south favour mist formation and keep the relative humidity high. The vine training system is free, with winding cords over the sand. Small cane stakes (pontões) are used to lift the clusters during the summer. Dry cane stakes and loose stone walls protect the vines from the wind. **Winemaking and Maturation** Harvest takes place at the end of September. This wine is produced by the classic “curtimenta” process, with 50 % of the grapes de‑stemmed. Fermentation occurs in stainless‑steel vats at controlled temperatures (26–28 °C) with careful recirculation. The aging period extended for five years, beginning in large vats of exotic wood, followed by small French second‑use oak barrels (over 4 months), and finally in tanks and the bottle. Bottled in May 2023. **Winemaker**: Francisco Figueiredo. **Storing Potential**: Up to 20 years. **Pairings**: Perfect with roasted meats, game, and mushroom dishes.
