Selective manual harvest in 15‑kg bins. Roughly 50 % comes from direct pressing of whole bunches, followed by decantation after 24 h. The remaining 50 % originates from gently crushed grapes that are macerated at low temperatures for 3–6 hours. The blend ferments at a controlled temperature in stainless‑steel tanks.
