This Chablis Les Grenouilles is, quite simply, an exercise in meticulousness and elegance. The Chardonnay grapes are sculpted with almost scientific precision, thanks to a pneumatic pressing followed by an “enzymatic” process of 12-24 hours at 15°C – clearly aiming to extract the fruit’s sweetness to the absolute maximum. The indigenous yeast fermentation, conducted in stainless steel tanks and oak barriques, speaks to a deep respect for the terroir. The result is a deeply mineral and citrus-driven white, undeniably a classic, and ideally suited to oysters or a beautifully grilled white fish.
