This Algarve Syrah from João Clara clearly needed a little time off before hitting the bottle. Fifteen months in French oak suggest a seriously relaxed maturation, and the cold maceration – five days of it – ensures the fruit retains its vibrant intensity. A prolonged fermentation (20 days) adds layers of complexity. Absolutely perfect with a good grilled steak and aromatic herbs – a pairing that simply *must* be tried.
