The first Pinot Noir plantings in Burgundy probably date back to 150 BCE. This wine, made 100 % from these famed grapes, is the archetype of Burgundy Pinot Noir for Joseph Drouhin. Maceration and vinification can take 2 to 3 weeks, with native yeasts and fermentation temperatures under full control. Joseph Drouhin seeks complete control over the extraction process; extraction gives colour and body to a wine, but should never be detrimental to its finesse and typical character. The wine ages in stainless‑steel tanks (7 to 8 months) and in barrels for one to two years for the higher‑origin wines. Throughout the ageing process, decisions are made only after careful evaluation of the barrel, and the data obtained are then completed through technical analysis. As with all other Joseph Drouhin wines, the absolute priority is given to the true expression of terroir and vintage character. It is a charming wine, with a bright ruby colour and a nose rich in red fruit aromas (raspberry, currant, wild strawberry). On the palate, the wine is pleasant, fruity and refreshing, with light tannins and great elegance.
