Manual vinification, pressing very slowly to respect the fruit. Aging in stainless steel for 7‑8 months. Throughout the ageing process, decisions are made only after a careful assessment of the taste. The data obtained are complemented by technical analysis. As with all other Joseph Drouhin wines, the absolute priority is the true expression of terroir and vintage character. A dry, lively wine, typical of Chablis. Bright green‑yellow colour with green reflections. On the nose, complex, mineral aromas recall lemon and white flower, with vegetal notes such as asparagus or artichokes and marine hints. On the palate, the first impression is clear and crisp, with a long finish, fruity and mineral flavours and a faint honey note as the wine evolves.
