Kelman wines are crafted with minimal intervention, striving to preserve the authenticity of their origin. Viticulture follows integrated production and sustainability principles, responsibly managing resources and safeguarding ecosystems. The indigenous Dão grapes come exclusively from the estate’s own vineyards—about six hectares planted in 2000, complemented by small parcels of old vines, some centenary plots dating back to 1931. Kelman Dez Castas is the product of this historic parcel, a traditional field blend. Production is dry, with no irrigation and a manual harvest. No animal‑derived products are used, making the wines suitable for vegan consumption. Vinification comes from a single 50‑year‑old parcel composed of ten co‑planted traditional Portuguese varieties. Manual harvesting is followed by rigorous selection and destemming. Fermentation occurs in granite vats with foot‑mashing, respecting the natural co‑fermentation of the field blend. Maceration is gentle to preserve fruit freshness and tannin finesse. The wine ages for six months in third‑use French oak barrels, then undergoes fining in stainless steel. Before bottling, a light vegetal‑origin clarification and minimal filtration are applied, preserving the aromatic expression and natural structure.
