Manual harvest at its peak: grapes are destemmed, crushed, and vinified in a careful maceration that extracts colour, tannins, and film aromas, with continuous pumping throughout fermentation. The process takes place in tanks kept at a controlled 28‑30 °C until the desired Baumé is achieved, after which grape brandy is added, creating a fortified wine. The result is an exceptionally high‑quality blend of several vintages, designed to deliver the complementary organoleptic traits typical of this aged tawny style. The wine is then aged in oak for varying periods; the age on the label reflects the approximate average of the different barrels in the batch, conveying the character imparted by the oak ageing.
